Resumen

La identidad regional yucateca se encuentra sostenida por distintos discursos y prácticas culturales, entre ellas, las formas de cocinar y de consumir la comida. El canon gastronómico tiene la tendencia a promover reglas más o menos rígidas tanto acerca de los ingredientes como de las técnicas y tecnologías consideradas “correctas” para la preparación de un platillo dado. Este artículo examina cómo la elaboración de platillos yucatecos enfrenta una serie de niveles de performance que permiten la confirmación, para el sujeto y ante los demás, del desempeño como buen cocinero o cocinera, además de ser comida “auténticamente” yucateca.
